Waffle Sheets with Ground Meat in Batter (Pan-Fried)

Step 1
How to make waffle sheets with ground meat in batter in a skillet? Prepare all ingredients. It’s best to use fresh ground meat so it stays denser (chicken or turkey works best). After thawing, ground meat becomes watery. Waffle sheets can be any shape: round, square, rectangular. Some stores sell portion-sized sheets that don’t need cutting. Use refined vegetable oil.
Step 2
Peel the onion, rinse it, and pat dry with a towel. Chop finely. If the ground meat is quite dense, you can grind the onion in a meat grinder or blender - onion juice will make the mixture slightly moister.
Step 3
I prefer to make ground meat myself. For this I bought chilled chicken fillet and ground it. You can also use pork or beef, or make a mixed mince. Add the chopped onion, salt, and ground black pepper. Mix well. The filling should be fairly dense; if it turns slightly watery, add a little breadcrumbs.
Step 4
Spread a portion of the meat filling on the first waffle sheet (22 cm / about 8.7 in diameter) in a thin, even layer. I used about 2½ heaping tablespoons of filling per sheet.
Step 5
Place the second sheet on top and press lightly with your hand. Add more meat filling and spread in a thin layer.
Step 6
Add the third sheet. Press lightly so it adheres tightly to the meat layer. At this stage I wanted to stop assembling because I worried it wouldn’t cook through, but I decided to continue - the stack was low, and I still had filling and sheets left.
Step 7
Spread a thin layer of meat filling on the third sheet.
Step 8
Place the fourth sheet on top and press lightly. Add the remaining filling (about 2½ tablespoons) and smooth it in a thin layer.
Step 9
Place the fifth waffle sheet on top and press lightly with your palm. From a pack of 7 sheets, I used 5. Cut the assembled waffle “cake” into portions. I got 8 pieces.
Step 10
Now make the batter. Crack medium eggs into a deep bowl/plate. Add water. Salt to taste. Whisk with a fork until smooth. This amount of eggs is enough to fry all pieces.
Step 11
Dip a waffle piece into the batter. Use a fork to help - because the piece becomes softer as the meat filling absorbs moisture.
Step 12
5-7 minutes before frying, pour oil into a skillet and heat over medium. Once hot, reduce the heat to very low. Add the battered pieces. Cover with a lid. Fry 4-5 minutes until golden on one side. Watch so they don’t burn. You may need a little more or less time depending on your stove.
Step 13
Flip the waffle pieces to the other side. Cover and fry another 4-5 minutes over the lowest heat.
Step 14
Transfer to paper towels to remove excess oil.
