Vegan Lentil Patties

Step 1
How to make vegan lentil patties? Prepare all ingredients. Use medium carrots and onion, and a large potato (or 2 small). Any neutral vegetable oil works. Green lentils are best because they hold their shape. Rinse them in several changes of water, add 2 cups of water, and cook. It takes about 25 minutes after boiling. If you soak the lentils in advance, they’ll cook faster.
Step 2
Peel and rinse the onion and carrot. Grate the carrot on a coarse grater or cut into thin strips. Dice the onion. Since the vegetables will be blended later, the cut shape doesn’t matter.
Step 3
Heat a frying pan and carefully add 2 tbsp vegetable oil. Sauté the vegetables over medium heat for 6-7 minutes, stirring occasionally. Let cool.
Step 4
Peel the potato and garlic. Grate them on a fine grater and drain off the released juice. Drain carefully so only the liquid goes out and the starch stays - this helps the patties hold their shape.
Step 5
Check the lentils: if they’re soft but there’s too much water left, increase the heat and evaporate all the liquid, stirring. Let the cooked lentils cool a bit. In a deep bowl, combine the sautéed onion and carrot, grated potato and garlic, and the lentils. Add salt and spices to taste.
Step 6
Blend all ingredients with a blender. Mix well. If the mixture is too loose to shape, add flour in small portions until it no longer spreads. I didn’t need flour this time.
Step 7
The patties are very tender; if you make them too large, they’ll be hard to flip. For one patty, a portion about the size of a large walnut is enough. Shape the patties and fry over medium heat in vegetable oil, on both sides, until browned.
Step 8
You can also fry them without oil. In that case, lower the heat and increase the cooking time.
