Turkish-Style Stuffed Beet Leaves

Preparation
Step 1
Prepare all necessary ingredients and spices for the aromatic Turkish-style stuffed beet leaves baked in the oven under a sour cream and tomato sauce.
Step 2
To make the sauce base, heat 2 tablespoons of vegetable oil in a skillet over medium-high heat. Add 1 finely chopped onion, stir, and sauté until golden.
Step 3
Add 1 grated carrot, stir, and continue frying the vegetables over high heat for a few minutes.
Step 4
In a large bowl, combine 600 g (about 1.3 lb) of ground meat, 200 g (about 1 cup) of boiled rice, salt to taste, cumin, coriander, khmeli-suneli, and a mix of black and red ground pepper.
Step 5
Add half of the sautéed onion and carrot mixture from the skillet into the bowl.
Step 6
Mix everything thoroughly and let the filling rest for 20 minutes to absorb the flavors.
Step 7
Add to the remaining onion and carrot mixture in the skillet 1 diced tomato and 1 thinly sliced bell pepper.
Step 8
Press in 2 cloves of garlic, add salt and pepper to taste, mix, and cook the vegetables for another 2 minutes.
Step 9
Add 150 g (about ⅔ cup) of sour cream and 100 g (about ½ cup) of tomato sauce. Stir well to combine.
Step 10
Pour in 100 ml (about ½ cup) of hot water, mix again, cover with a lid, and simmer on low heat for about 7 minutes.
Step 11
Rinse the beet leaves thoroughly, place them smooth side down on a cutting board, and gently flatten the central vein. Trim the stems.
Step 12
Place 1 tablespoon of the meat filling onto each beet leaf.
Step 13
Roll up the leaves tightly, tucking in the edges to form firm cabbage roll–like parcels.
Step 14
Place the stuffed rolls into a baking dish, pour the prepared sauce over them, and bake in a 400°F (200°C) oven for 1 hour.
Step 15
Once baked, remove the pan from the oven and serve the stuffed beet leaves on plates.
