Preparation
Step 1
How do you make Turkish börek with meat filling? Prepare the ingredients for the filling. Use any ground meat: pork, beef, or mixed. Peel, rinse, and dice the onion into medium cubes.
Step 2
Heat vegetable oil in a skillet, add the onion and fry until golden. Add the ground meat and stir. Fry briefly, then add salt and pepper to taste. Stir again, cover with a lid, and simmer for 10-15 minutes. Cool the filling to room temperature.
Step 3
Prepare the soaking mixture. In a cup, mix eggs, plain natural yogurt (no additives), vegetable oil, and water. Preheat the oven to 180°C / 356°F.
Step 4
Take a sheet of filo dough, brush it with the soaking mixture, and place some filling along one edge.
Step 5
Roll the dough with the filling into a log. Do it carefully so the thin dough doesn’t tear.
Step 6
Coil the roll into a spiral (“snail”) and place it in a baking dish. My dish is 26 cm (about 10 in) in diameter. I lined the bottom with parchment and greased it with vegetable oil. Repeat with the remaining dough, soaking mixture, and filling to form one large spiral pie.
Step 7
For a golden crust, mix an egg with yogurt and brush the börek with this mixture. Optionally sprinkle with sesame seeds. Bake in a preheated 180°C / 356°F oven for 30-35 minutes until deeply golden. Time may vary depending on your oven. I baked for 30 minutes using top/bottom heat. Enjoy your meal!
