Tomato and Tuna Stew

Preparation
Step 1
Heat oil in a pan over medium heat. Add chopped onions and sauté until soft and lightly golden. Add garlic, ginger, and chili; fry for 1-2 minutes until fragrant.
Step 2
Add tomato paste and fry for 2 minutes to remove the acidity. Add chopped fresh tomatoes (or you can use canned tomatoes).
Step 3
Cook for 10–15 minutes, stirring occasionally, until thick and saucy. Add curry powder, paprika, thyme, salt, pepper.
Step 4
Gently stir in the drained tuna. Break it into chunks - not too fine.
Step 5
Simmer for 5-7 minutes so the fish absorbs the flavors. Serve hot with rice.
