Sweet Heart-Shaped Buns with Sugar

Preparation
Step 1
Measure all ingredients for the dough. Use high-quality wheat flour (the highest grade) - it’s best for rich yeast dough. Warm the milk slightly.
Step 2
Sift the flour into a large bowl with high sides. Sifting aerates it, helping the dough rise better and making the buns fluffier.
Step 3
Melt the butter on low heat or in the microwave. Cool it slightly; it should be warm but not hot.
Step 4
Activate the yeast in a small bowl: mix yeast with 1 tsp sugar and about half the warm milk. Stir and let stand for 10 minutes until a foamy layer forms.
Step 5
In a large mixing bowl, lightly beat the egg with sugar, salt, and vanilla sugar.
Step 6
Add the remaining milk and the activated yeast mixture. Stir to combine.
Step 7
Pour in the melted (not hot) butter and mix again.
Step 8
Add about ¾ of the sifted flour to the liquid mixture. Don’t add all the flour at once - you may need less depending on your flour’s quality.

Stir with a spoon at first.

Gradually add the rest of the flour while kneading by hand. Avoid adding too much - stiff dough won’t rise well or stay soft.

The dough should be soft, elastic, and not sticky. Cover the bowl with a towel or plastic wrap and leave in a warm place for 60-80 minutes to rise.

Take out butter for the filling in advance so it becomes soft and spreadable.

The dough should double or triple in size.

Gently deflate the dough and place it on a lightly floured or oiled surface. Divide it into equal pieces - depending on how big you want the buns. Roll each into a ball and cover to prevent drying.

Roll out one ball into a rectangular flat sheet.

Spread a thin layer of butter on top and sprinkle evenly with sugar.

Roll the sheet into a log.

Fold the log in half with the seam inside. Pinch the ends together.

Cut the folded side lengthwise without slicing all the way through.

Open up the cut side to form a heart shape. Repeat with the rest of the dough.

Lightly beat an egg yolk with some milk for brushing.

Place the hearts on a parchment-lined baking sheet, leaving space between them - they’ll expand as they bake. Let rise 10-15 minutes, then brush with the yolk mixture.

Bake in a preheated oven at 180°C (355°F) for 20-25 minutes, until golden. Adjust time depending on your oven.
