Preparation
Step 1
How can you easily cook tender and juicy marinated pork with a filling of onion and tomatoes, wrapped in cabbage leaves and baked in foil, that will delight many with its wonderful taste? First, prepare all the necessary ingredients and spices for this festive oven dish.
Step 2
To make the marinade, press three cloves of garlic into a bowl using a garlic press, then add 1 dessert spoon of salt, 1/2 teaspoon of ground pepper mix, 1/2 teaspoon of khmeli-suneli and 1/3 teaspoon of ground coriander.
Step 3
Add 1 teaspoon of paprika and 50 ml (about 3 1/2 tablespoons) of vegetable oil to the bowl.
Step 4
Add 2 tablespoons of dried parsley, dill and basil, then mix everything until smooth - the marinade is ready.
Step 5
Slice 2 kg (about 4.4 lb) of pork neck into layers about 1.5 cm (a little over 1/2 inch) thick, cutting almost but not quite all the way through so the piece stays in one piece like an accordion.
Step 6
Between the slices of meat, spread about 1/2 teaspoon of the prepared marinade per cut and rub it in well with your hand, then let the meat soak in the spices for about 1 hour.
Step 7
In a deep bowl, place 200 g of cooked rice and about 30 g of finely grated Parmesan cheese, then mix the cheese and rice well together.
Step 8
Line a baking sheet with foil, then lay three cabbage leaves on the foil and place the meat on top of them.
Step 9
Between the slices of meat, put about 1 tablespoon of the rice-and-cheese filling and spread it evenly.
Step 10
Cover the rice-and-cheese filling with the next layer of meat and place on top thin rings of onion and two slices of tomato.
Step 11
Continue alternating between layers of meat with rice-and-cheese filling and layers with onion and tomato, then cover the meat on top with three cabbage leaves.
Step 12
Wrap the stuffed meat tightly in foil and place the baking sheet into a preheated oven at 200°C (about 390°F) for 80 minutes. Then open the foil and remove the cabbage leaves, and continue baking the meat for another 30 minutes until a crust forms. Five minutes before it is ready, sprinkle about 20 g of grated Parmesan cheese on top.
Step 13
When the time is up, place the cooked meat on a cutting board and slice it into portions.
Step 14
Arrange the sliced meat on plates and serve at the festive table.
