Stuffed Bell Peppers with Ground Meat and Rice

Preparation
Step 1
Prepare all the necessary ingredients and spices for making stuffed bell peppers in a skillet with tomato–sour cream sauce.
Step 2
To make the vegetable sauté: heat 2 tbsp vegetable oil in a skillet over medium heat. Finely chop a large onion and add it to the skillet.
Step 3
Grate a large carrot on a fine grater and add it to the onions.
Step 4
Stir and fry the vegetables over high heat until they soften and become aromatic.
Step 5
In a large bowl, place 600 g (1.3 lb) of mixed ground meat, add 200 g (7 oz) of pre-cooked rice, season with salt, cumin, coriander, khmeli-suneli, and a mix of red and black pepper.
Step 6
Add half of the sautéed vegetables to the meat mixture.
Step 7
Mix everything thoroughly and let the filling rest for 15-20 minutes to absorb the flavors.
Step 8
In the same skillet, combine 150 g (2/3 cup) sour cream, 150 g (2/3 cup) tomato sauce, 2 bay leaves, and 150 ml (2/3 cup) water.
Step 9
Stir the sauce well, cover with a lid, and bring to a gentle boil over medium heat. Turn off the heat and let it rest.
Step 10
Stuff the cleaned bell peppers tightly with the prepared filling and place them on a plate.

Heat 2 tbsp vegetable oil in a skillet and fry the stuffed peppers on all sides until golden brown.

Pour the prepared tomato–sour cream sauce over the peppers, spreading it evenly.
Step 13
Cover the skillet with a lid and simmer the peppers over medium heat for 1 hour, until fully cooked and tender.
