Strawberry Soufflé with Gelatin
A dessert that will win over everyone with a sweet tooth! This strawberry soufflé recipe is perfect for summer, when you want something light and refreshing. The combination of sweet condensed milk and slightly tart strawberries creates a perfect balance of flavor.

Preparation
Step 1
How do you make strawberry jelly? Prepare the ingredients. Wash the berries and dry them. Use sour cream with 30% fat. Sour cream with less than 20% fat will not whip up.
Step 2
Combine the gelatin with water, stir, and leave it to bloom.
Step 3
Blend the strawberries into a purée with an immersion blender. Rub the purée through a sieve to remove the seeds. I use the purée raw. If you want to extend the shelf life, bring the purée to a boil and cook it for a couple of minutes.
Step 4
Add the sweetened condensed milk to the strawberries and stir.
Step 5
Whip the cold sour cream for about 5 minutes until fluffy and creamy. Be careful not to overwhip it.
Step 6
Combine it with the strawberries and condensed milk and mix.
Step 7
Add a couple of spoonfuls of the sour cream and strawberry cream to the bloomed, melted gelatin, stir, and pour it into the main mixture.
Step 8
Pour the mixture into a mold with a volume of a little over 1 liter, about 4 1/4 cups. Cover with plastic wrap and refrigerate until fully set, about 3 to 4 hours on average. You can also pour it into dessert bowls.
Step 9
The soufflé is ready. If desired, decorate with fresh berries.
