Stewed Zucchini with Tomatoes and Garlic in a Frying Pan
A tasty, juicy, and healthy vegetable dish! This simple recipe is perfect for summer, when fresh produce is in season. Stewed zucchini with tomatoes and garlic in a frying pan makes a wonderful side for meat or fish, or a complete vegan and Lenten meal. You can also freeze it for winter.

Preparation
Step 1
You can adjust the proportions of vegetables to your taste. If you prefer a juicier dish, add more tomatoes. Use any herbs you like - I used basil and parsley. You can use either red or white onion.
Step 2
Wash the tomatoes and zucchini. I used young zucchini with a soft skin. Slice both the zucchini and tomatoes. Peel and finely chop the onion.
Step 3
Heat a frying pan until hot and pour in a bit of vegetable oil. Add the chopped onion and fry for about 1 minute.
Step 4
Add the sliced zucchini and tomatoes to the onion. Stew everything together for about 10 minutes. You can adjust the cooking time depending on how soft you like your zucchini. I prefer them tender but not falling apart. Young zucchini cook very quickly.
Step 5
As the vegetables cook, they will release plenty of juice. At the end, add the chopped fresh herbs and pressed garlic. Stir well, then remove the pan from the heat.
Step 6
The stewed zucchini with tomatoes are ready! Serve hot - it’s delicious!
