Stewed Rice
An incredibly tasty dish for a meat-free table or as a side! Stewed rice is cooked almost like pilaf, only without meat. Pre-frying makes the rice fluffy, and the vegetables give it a beautiful color and aroma. Besides carrot and onion, you can add any vegetables you like.

Preparation
Step 1
Any rice will work, both round-grain and long-grain. You can even use parboiled rice, just cook it according to the time and proportions given on the package. Besides onion and carrot you can add green beans, bell pepper, corn, peas. Any spices you like will also work here.
Step 2
Peel the onion and cut it into small cubes.
Step 3
Peel the carrot and grate it on a coarse grater.
Step 4
Heat a frying pan over medium heat and pour in some vegetable oil for frying. Add the chopped onion and carrot to the hot oil. Fry, stirring, for 5-7 minutes until golden. If you use other vegetables, add them after the onion and carrot are fried, and cook everything together for about 5 more minutes.
Step 5
Add well-rinsed rice to the vegetables. Fry the rice together with the vegetables, stirring, for a couple of minutes. During this time each grain will be coated with oil, which will keep the rice from sticking together while stewing. If you don’t like fluffy rice, you can skip this step.
Step 6
Pour clean cold water into the pan. Follow the water ratio indicated on your rice package. The standard is 1:2, i.e. 2 cups of water for 1 cup of rice. Sprinkle salt and pepper on top. If you wish, add your favorite spices. Do not stir the rice at this point! Cover the pan with a lid and reduce the heat to low.
Step 7
Simmer the rice until all the water is absorbed. This will take 15-20 minutes, depending on the type and amount of rice. Then turn off the heat and leave the dish to rest under the lid for another 10 minutes. During this time the remaining water will be fully absorbed and the rice will finish cooking. Only now stir the rice.
Step 8
Serve the dish at the table. Enjoy!
