Place the flour into a deep bowl, add salt, and mix well. Add the egg. Mix the flour with the egg, then begin pouring in warm water. Knead first with a fork, then with your hands.

If the dough becomes too stiff, add a little more water; if too soft, sprinkle in more flour. Knead until smooth. Transfer the dough to the counter and knead for about 10 minutes. Place it in a bag and let it rest - gluten will develop, and the dough will become more elastic.

While the dough rests, prepare the filling. You may grind the meat yourself or use ready-made mince.

Wash and peel the pumpkin; cut it into pieces.

Grate the pumpkin, chop it finely, or grind it together with the meat—any method works.

Prepare the onion the same way - chop or grate it.

In a bowl combine the meat, pumpkin, and onion. Add salt, pepper, and any spices you enjoy. Add chopped herbs if desired.
