Squid Stewed in Sour Cream with Onions in a Skillet
Quick, easy, and perfect for a fast dinner! Squid stewed in sour cream with onions turns out tender, soft, and wonderfully aromatic. They’re incredibly easy to cook and can be served in many ways - with a side dish or on their own. Simply delicious!

Preparation
Step 1
You can use sour cream of any fat content; I used 15%. In addition to the listed spices, feel free to add your favorite herbs and seasonings to taste.
Step 2
You can use pre-cleaned squid or unpeeled ones. If using uncleaned squid, remove the skin, entrails, and chitin plate. To make cleaning easier, dip the squid bodies into boiling water for 30 seconds. Slice the prepared squid into rings. Cut the tail fins into thin strips.
Step 3
Slice the onion into half rings or small cubes, as you prefer. You may also mince one garlic clove.
Step 4
Rinse, dry, and finely chop the dill. You may also use other greens of your choice.
Step 5
Heat both vegetable and butter in a skillet. Add the onion and sauté, stirring, until soft and lightly golden, about 3 minutes. There are two ways to proceed: Option 1: Add 1 tablespoon of flour to the onions and fry for another minute, stirring constantly, then pour in the sour cream. However, this method can sometimes cause lumps. I prefer to make the sour cream sauce differently.
Step 6
To prevent the sour cream from curdling during stewing, mix 1 tablespoon of cornstarch into the sour cream beforehand.
Step 7
Pour the sour cream with starch into the skillet with the onions. Season with salt and pepper and stir well. Reduce the heat to low and simmer for a couple of minutes, stirring. If needed, adjust the sauce consistency by adding milk, water, or extra sour cream.
Step 8
Add the squid to the skillet and stew everything together for no more than 3 minutes, or the squid will turn rubbery and tough.
Step 9
Sprinkle with chopped dill and stir.
Step 10
Remove the skillet from the heat, cover with a lid, and let the squid rest for about 20 minutes. Serve as a standalone dish or with your favorite side - rice, potatoes, or pasta. Enjoy!
