Squid in Garlic Sauce
Tender, juicy, budget-friendly and aromatic seafood. Squid in garlic sauce with a citrus note is a wonderful appetizer both for a family lunch and a romantic dinner. The dish is made very quickly, especially if you use ready-cut rings that only need thawing.

Step 1
How to make squid in garlic sauce? First prepare all the ingredients from the list. You can use whole squid or ready-cut frozen rings. You can skip the cayenne pepper if you prefer.

If the squid are whole, remove the skin, inner membranes, the chitin plate and all the innards. Rinse them thoroughly. Cut the squid bodies into rings. If your squid are frozen, thaw them beforehand, but not completely - it’s easier to clean slightly frozen squid. If you are using frozen rings, just thaw them and pat dry.

Peel the garlic cloves and slice them into thin pieces.
Step 4
Squeeze the juice from the lime. You can replace the lime with one small lemon or half of a large one.
Step 5
Rinse the dill, pat it dry and finely chop it. If you like, you can replace or complement it with other herbs such as parsley, cilantro or a mix of different herbs.
Step 6
In a frying pan over medium heat, heat the vegetable oil together with the butter. Add the garlic and fry until a strong aroma appears. Make sure the garlic doesn’t burn, so don’t walk away from the stove.
Step 7
Add the sliced squid to the pan and fry, stirring, for about 2 minutes, no longer; otherwise the squid will become tough and rubbery and not tasty at all.
Step 8
Reduce the heat to low. Pour in the lime juice, add the chopped dill, salt and both kinds of pepper. Quickly stir everything and remove the pan from the heat. You can cover the pan with a lid and leave the squid for 5-7 minutes so they soak up the sauce better.
Step 9
Divide the squid between plates. They can be served as a separate appetizer or as a main dish with any side dish you like. Enjoy!
