Spinach and groundnut stew

- tablespoon - 20 ml
- glass - 200 ml
Preparation
Step 1
In a small saucepan, mix peanut butter with about ½ cup warm water. Stir until smooth and cook gently for 5-7 minutes until slightly thickened. Set aside.
Step 2
Heat oil in a large pot over medium heat. Add chopped onions and fry until soft and golden.
Step 3
Stir in grated garlic, ginger, chopped chilies, and cook for another minute. Add tomato paste and chopped tomatoes, then simmer for 10-12 minutes until the sauce thickens and the oil begins to separate.
Step 4
Pour the cooked peanut mixture into the tomato base and stir well.
Step 5
Add curry paste, paprika, salt, and stock cubes. Add a little water or stock to reach your desired consistency.
Step 6
Stir in the chopped spinach. Simmer for another 5-10 minutes until wilted and well combined.
Step 7
Serve hot with boiled rice.
