Step 1
How do you make spicy tomato sauce with horseradish and garlic for winter? First, prepare all components. You can use any tomato variety. Adjust the amount of hot chili pepper to taste - use a bit more, a bit less, or omit it entirely.
Step 2
Wash the horseradish root from any remaining soil and peel it with a sharp thin knife. Peel the garlic. Rinse the tomatoes, hot pepper, horseradish root, and garlic in clean water. Cut large tomatoes in half and remove the stem ends.

Wash and sterilize the jars thoroughly using any method you like: microwave, oven, or a steam bath. I find oven sterilizing convenient. Sterilize the lids as well - either in the oven or by boiling in water (depending on the type of lids).
Step 4
Next, grind all components. You can do this with a meat grinder or a blender. This time I used a blender. Put the tomatoes into the blender jar; for convenience, cut large halves into two more pieces.
Step 5
Cut the horseradish root into small pieces and add to the tomatoes.

Next add the garlic: cut large cloves into halves or quarters, and leave small ones whole. Add the cloves to the tomatoes and horseradish.

Cut the hot chili pods in half, remove the seeds (partly), the stem, and the core. Cut the pepper into small pieces and add to the blender.
Step 8
Blend everything until smooth. Add salt and sugar to the tomato mixture.
Step 9
Stir and let stand for about 15 minutes so the salt and sugar crystals fully dissolve. Stir the sauce again.
Step 10
Pour the sauce into cooled jars, seal with lids, and store in the refrigerator.
