Preparation
Step 1
Prepare all ingredients for the dough. Use high-grade flour. The butter should be at room temperature, so take it out of the fridge beforehand.
Step 2
In 50 ml (about 3½ tbsp) of warm milk, mix 1 tsp sugar and 1 tbsp flour.
Step 3
Sprinkle the dry yeast on top. Do not stir - just scatter it evenly over the surface. Use instant yeast that activates in warm liquid.
Step 4
Leave the mixture in a warm place until a foamy “cap” appears, about 10-20 minutes. If no foam forms, the yeast is spoiled and won’t rise.
Step 5
Sift 350 g (2¾ cups) of flour into a bowl, add salt and the remaining sugar, and stir.
Step 6
Add the softened butter and sour cream.
Step 7
Rub the mixture with your hands until crumbly.
Step 8
Pour in the remaining warm milk and the yeast mixture.
Step 9
Knead a soft, elastic dough, gradually adding about 130 g (1 cup) of flour as needed. The dough should not be too stiff - if it feels hard, you’ve added too much flour.
Step 10
Form the dough into a ball, cover with a towel, and let it rise in a warm place for 1 hour. Then knead it again and let it rise another 30 minutes.
Step 11
While the dough rises, prepare the filling. Use rich, creamy cottage cheese - not too dry or grainy. If it’s coarse, blend it or press it through a sieve.

Mix the cottage cheese with the egg, sugar, and vanilla until smooth. If the mixture is too wet, add 1-2 tbsp flour.
Step 13
Stir in raisins (dark or light) and mix well.

On a floured surface, roll out the dough into a rectangle about 0.2-0.4 in (0.5–1 cm) thick.
Step 15
Spread the cottage cheese filling evenly over the dough.

Roll the dough into a log and cut into slices about 1¼-1½ in (3-3.5 cm) thick.

Place the swirls cut-side up on a parchment-lined baking sheet, leaving space between them, and let rise for 25 minutes.

Beat one small egg with a fork for brushing.

Brush the tops of the rolls with the beaten egg before baking.

Bake in a preheated oven at 350°F (180°C) for 25-30 minutes, until golden brown.

While baking, prepare the topping.

Mix sour cream with sugar until fully dissolved.
