Soup with Smoked Pork Ribs
A hearty, nourishing first course for a family lunch. Soup with smoked ribs is a nice way to diversify the usual menu. The ribs replace meat in the soup and give the broth a pleasant smoky flavor. Even a beginner can easily cook this dish, and the result will always be pleasing.

Step 1
How to cook soup with smoked pork ribs? First prepare all the necessary ingredients. You can change or add the vegetable part to your taste. The amount of vegetables in the soup is approximate; adjust the proportions as you like. You can replace the rice with vermicelli, noodles or another grain such as millet or buckwheat, or omit it altogether.

Cut the smoked ribs into segments. You can replace the ribs with other pork on the bone or boneless, for example shoulder, neck or ham.

Peel the potatoes and cut them into medium-sized cubes.
Step 4
Peel the carrot and slice it into rounds or half-moons. If you wish, you can change the way you cut it.
Step 5
Wash the tomato and cut it into cubes. Fresh tomatoes in this recipe can be replaced with canned tomatoes in their own juice, tomato paste or ketchup.
Step 6
Peel the onion and cut it into cubes. If you or your children don’t like onion, you can omit it completely, or better yet, put in a whole peeled onion instead of chopped. It will simmer, give its juice to the broth, and you can discard it at the very end.
Step 7
Wash the dill, pat it dry and finely chop it. If you like, you can replace or supplement it with other herbs such as parsley, cilantro, green onions, or a mix of different herbs.
Step 8
Bring water to a boil in a pot. Add the smoked ribs and the onion. Cook over medium heat for 30-40 minutes.
Step 9
Add the potatoes, rice and carrot to the broth. Cook, stirring occasionally, for about 15 minutes.
Step 10
Add the chopped tomatoes and a clove of garlic passed through a press. Simmer, stirring, for another 5-7 minutes.

At the end, season the soup with salt and pepper. Add the chopped dill.
Step 12
Remove the pot from the heat, cover with a lid and let the soup stand for about 10 minutes. Then ladle into bowls and serve. Enjoy your meal!
