Smoked Chicken and Prune Salad

Step 1
How to make a salad with smoked chicken, prunes, and walnuts? Prepare the ingredients. Any part of the chicken works - breast, thighs, or drumsticks (as I used). Use pitted prunes. Boil the potatoes, carrots, and eggs in advance and let them cool. You can use sour cream instead of mayonnaise.
Step 2
How to boil vegetables for salad? Scrub the vegetables well with a brush under running water and place them in a pot. Cover with clean cold water and cook over medium heat. After it comes to a boil, cook the potatoes and carrots for about 30 minutes. Exact time depends on size. Check doneness with a knife - it should pierce easily. Cool the cooked vegetables and peel them. Grate the potatoes on a coarse grater.
Step 3
Place the potatoes as the first layer on a plate using a cooking ring and lightly press down. Spread with mayonnaise. Cut the meat off the bones, dice it small, and place as the next layer. Rinse and pat dry the prunes. If they are firm, soak briefly in hot water (mine were soft). Chop the prunes into small pieces and add on top of the chicken. Spread mayonnaise over these two layers.
Step 4
Grate the hard-boiled eggs on a coarse grater. Add as the next layer, lightly press down, and spread with mayonnaise.
Step 5
Grate the carrots on a coarse grater, add on top of the eggs, and spread with mayonnaise.
Step 6
Grate the cheese on a medium grater (the salad will be more tender). Add the grated cheese in the ring on top of everything. No mayonnaise is needed on the cheese layer.
Step 7
Finely chop the walnuts with a knife. Sprinkle the salad with the walnuts. Refrigerate for about 2 hours to let it set.
Step 8
Remove the cooking ring, decorate if you like, and serve. Enjoy your meal!
