Skillet Mushrooms with Vegetables
Buy fresh medium-size button mushrooms, snow-white, without spots, damage, or any rotten smell. They shouldn’t feel slimy. Rinse the mushrooms well from soil under a stream of warm or cold water.

Step 1
How do you make mushrooms with vegetables in a skillet? Prepare the needed ingredients. I’ll use button mushrooms, but you can replace them with wild mushrooms. You can slightly change the vegetable ratios and amounts to taste. Sour cream can be any fat percentage. Peel the potatoes in advance.
Step 2
Peel the onion and carrot. Finely chop the onion. Grate the carrot or slice it into rounds or sticks.
Step 3
Pour vegetable oil into a hot skillet and sauté the onion and carrot for a couple of minutes.
Step 4
Rinse the mushrooms to remove dirt and slice them. Add them to the skillet and sauté with the onion and carrot for 3-5 minutes more.
Step 5
Cut the potatoes into large pieces and add them to the skillet too. Pour in a little hot water. Add salt and spices to taste. Simmer everything covered for about 15 minutes.
Step 6
Then add the chopped bell pepper to the skillet.
Step 7
After about 10 minutes, add the zucchini sliced into half-rings or quarters. Let the zucchini cook through for 10-15 minutes.
Step 8
At the end, add the chopped tomatoes and herbs.

Add a little sour cream. If you want more sauce, add more water. Heat everything together for 5-7 minutes more and remove from the heat.
Step 10
Divide the finished dish among plates and serve. Enjoy your meal!
