Step 1
How to braise cabbage with sausages in a skillet? Prepare all the necessary ingredients. Choose juicy cabbage, preferably fresh, not old. It should be bright green or white, without heavy scuffing, with firm, juicy leaves. You can replace tomato paste with ketchup. Besides the ingredients listed, you can add 1 small onion, finely chopped.
Step 2
You can use any sausages you like, but keep in mind they can strongly affect the final flavor. For example, if you use sausages with a pronounced smoky taste, the whole dish will have a light smoked flavor too. If you want a neutral taste, choose mild sausages. Remove the factory casing and slice the sausages into not-too-thin rounds.
Step 3
Rinse the cabbage, cut out the core, and shred thinly, avoiding the dense parts of the leaves near the core.
Step 4
Peel the carrot and grate it on a coarse grater.
Step 5
Heat vegetable oil in a deep, thick-bottomed skillet. Add the grated carrot and sauté over medium heat until soft, about 5 minutes. If you want to add chopped onion, add it together with the carrot.
Step 6
Add the cabbage and mix thoroughly with the carrot. At first the cabbage takes up a lot of space, but as it braises, excess moisture evaporates and the cabbage will shrink a lot. So if not all the cabbage fits at once, add it in parts, mixing and adding more as it wilts down.
Step 7
Braise the cabbage and carrot over low heat, covered, for about 15 minutes.
Step 8
Pour in 1 cup boiling water and continue braising, covered, until the cabbage is soft - about 30 more minutes. If the cabbage is young, it will take a bit less time; if it’s tougher, a bit longer. Check for doneness from time to time.
Step 9
Add tomato paste, a bay leaf, and allspice. Stir and simmer over low heat for about 7 minutes.
Step 10
Add the prepared sausages to the cabbage and mix. Braise everything together for about 5 more minutes. Taste and add salt and pepper if needed. It’s best to season at the end, because after adding tomato paste and sausages the dish may already be salty enough. This depends on how salty the tomato paste and sausages are.
Step 11
Remove the finished cabbage from the heat and let it rest, covered, for about 10 minutes. Enjoy your meal!
