Simple Oven-Baked Tangerine Cake

Step 1
How do you make a simple tangerine cake in the oven? First, prepare the ingredients from the list. Use all-purpose flour of the highest grade. Choose large eggs; if your eggs are small, use 3. Take the eggs out of the fridge in advance so they’re at room temperature. Choose sweet, fragrant tangerines. Preheat the oven to 180°C / 356°F.
Step 2
Wash the tangerines, peel them, and separate into segments.
Step 3
Combine the eggs with sugar and beat with a mixer until fluffy. The cake’s lightness depends on how you whip the eggs. Don’t beat the mixture until it’s completely white and very dense - then the egg foam loses the air bubbles that lift the batter. In that case, even baking powder won’t help: the cake won’t rise or will rise only slightly.
Step 4
Add sour cream and beat again until smooth.

Add the flour sifted with baking powder in batches. Sifting aerates the flour, making the cake more tender and fluffy.

Beat the batter on low speed or fold with a spatula. The batter should be thick and sticky, semi-fluid. Keep in mind you may need more or less flour depending on the flour quality and egg size - judge by the batter consistency.

Pour the batter into a baking pan greased with butter (my pan is 20 cm / about 8 in in diameter). Arrange the tangerine segments on top.

Distribute small pieces of butter over the top. Sprinkle everything with vanilla sugar. Bake in the preheated 180°C / 356°F oven for 30-40 minutes. Exact baking time depends on your oven.

Transfer the finished tangerine cake to a serving dish, dust with powdered sugar if desired, and serve. Enjoy your meal!
