Simple mushroom soup

Preparation
Step 1
Melt the butter in a large pot over medium heat. Add the sliced leeks and crushed garlic, then cook gently for 4-5 minutes, or until softened but not browned.

Add the sliced mushrooms and thyme leaves, increase the heat to high, and cook for 3-5 minutes, stirring occasionally, until the mushrooms are soft and have released most of their liquid.
Step 3
Pour in the stock and simmer for 5 minutes.
Step 4
Remove the pot from the heat and carefully transfer the mixture to a food processor. Blend until smooth, or alternatively, use a stick blender directly in the pot to blitz the soup until velvety and lump-free.
Step 5
Ladle the soup into four bowls and serve hot.
