Simple Kefir Meat Pour-Over Pie
Very simple, fast, hearty, and budget-friendly - perfect for dinner or a quick snack. This kefir meat pour-over pie comes out soft and airy. Convenient to take on the go, to work, or pack for school. I love this pie! The batter can be used as a base, while fillings can be changed as you like: fish, cottage cheese, cabbage, spinach, etc.

Preparation
Step 1
For the filling, I used a mix of pork and beef, but you can use only pork, beef, chicken fillet, or turkey. Grind the meat ahead of time.
Step 2
Peel the onion, rinse it under cold water, and chop finely. Heat refined vegetable oil in a pan. Sauté the onion for 1-2 minutes until soft.
Step 3
Add the meat to the onion. Cook over medium heat, breaking it up with a fork or spatula to avoid lumps. Season with salt, pepper, dried basil, or any spices you like. Add a pressed garlic clove for aroma.
Step 4
Cook the meat over medium heat for 4-5 minutes until the liquid evaporates. Don’t overbrown - the filling shouldn’t be dry.
Step 5
While the filling cooks, quickly prepare the batter. Prepare all ingredients. Sift the flour to enrich it with oxygen - this will make the pie airy.
Step 6
Crack 3 large eggs into a bowl (or 4 small ones). Add salt and sugar.
Step 7
Beat with a fork or whisk until smooth.
Step 8
Add kefir and whisk again until uniform.
Step 9
In a separate bowl, mix sifted flour with baking soda.
Step 10
Combine the dry and wet ingredients by pouring the egg–kefir mixture into the flour. Mix well until all flour is incorporated. The batter is ready! By this time, the filling is ready too - the whole prep took about 10 minutes.

Grease a ceramic, metal, or heatproof glass baking dish (silicone doesn’t need greasing). Pour in half the batter and spread with a spoon. Add the cooked meat filling and sprinkle with chopped dill or any herbs.
Step 12
Pour the remaining batter on top. Bake in a preheated 350°F (180°C) oven for 35-45 minutes. Baking time may vary. Check doneness with a wooden toothpick - it should come out clean.
Step 13
Remove the finished pie from the oven. Optionally brush the top with a bit of butter for shine. Let it cool slightly, then slice and taste.

Serve warm with fresh or canned vegetables or dips. Enjoy!
