Preparation
Step 1
How do you make a simple bread-machine kulich? Prepare the ingredients. Take the butter out of the fridge in advance so it softens well. The egg should also be at room temperature. Use instant yeast that is mixed with flour. I bake in a Moulinex bread machine.
Step 2
Take the bread machine pan and install the kneading paddle. In my model, ingredients are added this way: liquids first, then dry. Other models may differ - check your machine’s manual. Warm the milk until it’s warm, then pour it into the pan. It must be warm, not hot, so it doesn’t scald and kill the yeast. Add the sugar, a pinch of salt, and the egg. Add the softened butter.
Step 3
Sift the flour into the pan. This removes any debris and aerates the flour, making the bake fluffier. Make a small well in the center and add the yeast. This is also noted in the instructions - yeast shouldn’t contact the milk.
Step 4
Place the pan into the bread machine and start a program suitable for kulich. In my bread machine it’s “French bread/loaf.” I set the loaf size to 500 g and always choose a light crust because my machine browns very strongly. Adjust for your model - medium crust may work. The kneading will start. Use a silicone spatula to scrape flour off the sides to help the machine.
Step 5
Watch the dough consistency: if it seems too runny, add a couple more tablespoons of flour; if too dry, add a little more milk. When the dough forms a ball, add the rinsed raisins. Help kneading again by guiding the raisins toward the center. In the end you should have a smooth, uniform dough ball that doesn’t stick to the sides.
Step 6
When that happens, close the lid and leave the bread machine to finish the program. After the end signal, open the lid and remove the pan.
Step 7
Turn the pan over and shake out the kulich. If the paddle is stuck in the loaf, remove it with a hook. Let the kulich cool on a rack under a towel.
Step 8
Decorate the finished kulich with icing if desired, or simply dust with powdered sugar. Serve. Enjoy your meal!
