Shortcrust Cottage Cheese Pie in the Oven

Preparation
Step 1
Measure all the ingredients for the dough. Take the butter out of the fridge in advance so it softens.

Combine flour with baking powder. Sift the mixture to aerate it - this helps the dough rise better and makes the pie more crumbly and tender.
Step 3
Mix the softened butter with sugar and salt until smooth.
Step 4
Add the egg to the mixture.

Stir well until the mixture is homogeneous.
Step 6
Add the sifted flour with baking powder. First, mix with a spoon, then knead the dough with your hands. Do this quickly so the butter doesn’t melt from the warmth of your hands. You may need a little more or less flour - adjust for a soft, pliable consistency.

The dough should be soft, smooth, buttery, and non-sticky.

Divide the dough into two uneven parts. Wrap the larger part (for the pie base) in plastic wrap and refrigerate for 30 minutes. Place the smaller part (for the topping) in the freezer - it should chill enough to be easily grated.

Meanwhile, prepare the filling. Use cottage cheese and sour cream of any fat content, but soft cottage cheese is best. Rinse and dry the raisins. You can also add berries or fruit - fresh or canned - or leave it plain.

For a smoother texture, blend the cottage cheese until creamy.

Add the egg, sugar, vanilla sugar, and sour cream.

Beat until the mixture becomes smooth and thick.

Add raisins and mix well.

Line the bottom of a baking pan with parchment paper. I used an 18 cm (7-inch) springform pan. The sides don’t need greasing since the dough contains enough butter. Press the chilled dough into the bottom and sides of the pan, forming edges about 3-4 cm (1-1.5 inches) high.

Spread the cottage cheese filling evenly over the dough base.

Grate the chilled dough from the freezer over the top of the pie using a coarse grater.

Bake in a preheated oven at 180°C (355°F) for about 30 minutes, until golden brown. Adjust baking time depending on your oven.
