Sea Buckthorn and Apple Compote for Winter

Preparation
Step 1
Choose firm but ripe apples. Prefer sweeter varieties because sea buckthorn adds acidity. Remove berries from the branches and clean them from leaves and debris.
Step 2
Rinse the berries several times in cold water, then drain. Rinse the apples. Cut each apple into 4 pieces and remove the core. Trim away any damaged areas.
Step 3
You can use jars of any size - the process is the same. You can fill the jars completely for a more concentrated compote, or partially. I usually fill jars about 1/3 of the volume. Slice the apples, place them into clean jars, and add sea buckthorn berries.
Step 4
Bring water to a boil separately and pour the hot water into the jars to the very top. Cover loosely with lids and let stand for 20 minutes. The apples and berries will heat through, and air will escape - you will see small bubbles.
Step 5
Pour all the water from the jars into a pot and add sugar. Adjust the amount of sugar to taste. Bring the pot to a boil, stirring to dissolve the sugar. Let the syrup boil for 1-2 minutes.
Step 6
Pour the boiling syrup back into the jars to the top and seal tightly. Wrap the jars in a blanket and let them cool slowly. Once fully cooled, store in a cool place.

The compote will infuse, and the sea buckthorn will give it a beautiful yellow color. Enjoy your winter treat!
