Salad with Smoked Chicken Breast and Fresh Cucumber

Preparation
Step 1
How to make a tasty salad with smoked breast and fresh cucumber? Very simply and quickly. First, prepare all the ingredients. The meat from the smoked breast can be replaced with meat from drumsticks or thighs. You can use any cheese you like.
Step 2
Wash and dry the cucumbers, then cut them into thin matchsticks or small cubes. If the skin is not tough, damaged or bitter, you don’t need to peel it. One long cucumber can be replaced with two short ones.
Step 3
Wash and dry the Chinese (Napa) cabbage and slice it into thin strips. You can chop a whole head or separate it into individual leaves first. If you want the salad to be more tender, cut off the thick white parts in the centre of each leaf.
Step 4
Remove the skin and bones from the smoked breast and cut the meat into small pieces. You can also simply pull the meat into fibres. Smoked chicken can be replaced with regular boiled or pan-fried fillet.
Step 5
Boil the eggs until hard, cool them and peel. Separate whites from yolks. Grate the whites on a coarse grater or cut them into thin strips.
Step 6
Grate the yolks on a fine grater. You can grate them in advance, but it is better to grate them straight onto the salad so they stay fluffier.
Step 7
Grate the cheese on a coarse or medium grater.
Step 8
Place a cooking ring (12-16 cm in diameter) on a plate. Build the salad in layers. First put the smoked chicken in the ring and spread a little mayonnaise on top. I transferred the mayonnaise into a piping bag to make it easier to apply.
Step 9
Next, spreading mayonnaise over each layer, add the fresh cucumber, grated cheese and chopped whites. If you like, you can sprinkle the layers with a little salt and pepper, but I usually don’t add spices to mayonnaise salads.
Step 10
Put the grated yolks on top of the whites. I grated them directly over the salad using a fine grater. Drizzle the yolks with a bit of mayonnaise.
Step 11
The last layer is the chopped Chinese cabbage. There is no need to pour mayonnaise over it. Place the salad in the fridge for 1 hour. If you don’t have time or desire to layer the salad in a ring, you can simply mix all the ingredients in a salad bowl, add mayonnaise and stir.
Step 12
Before serving, remove the cooking ring. Garnish the salad with cherry tomatoes and herbs to taste. Enjoy!
