Rustic Pan-Fried Potatoes

Preparation
Step 1
Prepare the ingredients: potatoes, oil, and spices. Use oil suitable for frying. Choose medium-sized, oval, uniform potatoes. Young or regular potatoes work.

Rustic potatoes are cooked with skins on. Wash thoroughly and scrub with a brush. If heavily soiled, soak in water for 30 minutes and then clean easily.
Step 3
Cut each potato lengthwise into 4 wedges. Best with frying varieties, yellowish inside with low starch. If potatoes are starchy, rinse to remove surface starch.
Step 4
Place potatoes in a bowl, season with salt, pepper, paprika, and turmeric.

Mix thoroughly so spices coat evenly.

Heat vegetable oil in a skillet over medium-high heat. Fry potatoes, stirring every 3 minutes until golden outside and soft inside. Cooking time depends on potato size and pan heat, about 20 minutes.
Step 7
Transfer cooked potatoes to a bowl lined with paper towels to absorb excess oil. Serve immediately while hot. Enjoy!
