Quick Oven-Baked Treat for Tea
Unusual, tasty, and budget-friendly! This quick oven-baked treat is a kefir cake with cottage cheese balls inside. It always turns out great on the first try and instantly becomes a favorite.

Preparation
Step 1
Start by preparing the batter. Use high-grade flour. Kefir should have at least 2.5% fat and be at room temperature, so take it out of the fridge in advance. Use neutral refined vegetable oil.
Step 2
In a bowl, mix kefir with baking soda and leave for 5-10 minutes until foam appears on the surface.
Step 3
When the kefir starts to foam, add the eggs and sugar. Mix thoroughly with a whisk.
Step 4
Pour in the vegetable oil and mix again.

Sift the flour together with the baking powder and add it in parts to the kefir mixture, mixing each time until smooth. Depending on flour quality, kefir moisture, and egg size, you may need slightly more or less flour.

You should get a thick but pourable, smooth batter.
Step 7
Now prepare the cottage cheese filling. Use cottage cheese of any fat content, but preferably not too dry or crumbly. The fattier the cheese, the easier it will be to form the balls and the tastier the cake will turn out. Low-fat cottage cheese also works.
Step 8
In a bowl, combine cottage cheese, an egg, and sugar. Mash everything thoroughly with a fork. Choose a smaller egg so the mixture doesn’t become too thin.
Step 9
With slightly damp hands, shape small balls about the size of a walnut. If the mixture is too loose, add 1-2 tablespoons of flour to help bind it. I got 7 balls. To save time, you can prepare the filling while the kefir and soda are resting (step 2).
Step 10
Pour the batter into a greased baking pan (mine was 24 cm, but smaller works too). Arrange the cottage cheese balls on top, leaving space between them. Bake in a preheated 180°C (about 350°F) oven for around 40 minutes until golden. Exact time depends on your oven and cake height. The batter rises significantly due to soda and baking powder, so the balls will end up inside the cake.
