Puff Pastry Apple Pie

Preparation
Step 1
You can prepare puff pastry in advance - there are many great recipes for it, or you can use store-bought pastry. I used sheet pastry since it thaws faster and rolls out easily. Just don’t forget to separate the sheets before thawing so they don’t stick together.
Step 2
Roll out both sheets of puff pastry into two even rectangles, not too thin. If needed, dust the work surface with flour to prevent sticking.
Step 3
Prepare the filling. Cut the apples in half, remove the seeds, and slice thinly. I kept the skins on, but you can peel them if you wish. Drizzle the apple slices with cognac and mix - adjust the amount to your taste.
Step 4
Place one sheet of dough on a baking tray lined with parchment paper. Spread the apples evenly on top, leaving about ½-1 inch (1-2 cm) around the edges.
Step 5
Sprinkle the apples with sugar. You can use brown sugar for a caramel flavor. Optionally, add cinnamon or vanilla.
Step 6
Brush the edges of the dough with a beaten egg.
Step 7
Place the second sheet of dough on top and seal the edges. Make decorative cuts in the center to allow steam to escape.
Step 8
Brush the pie with the remaining egg and sprinkle with sugar. Bake in a preheated oven at 220°C (430°F) for about 25 minutes, until golden. Leave it in the slightly open oven for 10 more minutes to cool slowly. Serve warm or at room temperature - it’s delicious either way. Enjoy!
