Preparation
Step 1
Remove the pastry from the fridge to thaw. You can make homemade dough if preferred. Choose apples to your taste; adjust sugar depending on their sweetness. Keep butter chilled.
Step 2
Lightly flour your work surface. Roll out the pastry to fit your baking dish, considering the edges.
Step 3
Place the dough in the dish as a basket. Trim excess dough. Freeze the base while preparing the filling. Preheat oven to 190 °C (375 °F).
Step 4
Wash apples thoroughly, preferably with baking soda to remove wax. Cut into quarters, remove cores, and slice thinly (~5 mm). Keep the peel for structure.
Step 5
Place apple slices in a bowl, sprinkle with sugar, and mix.
Step 6
Take the frozen pastry base from the fridge. Arrange apple slices on top, overlapping slightly since they shrink while baking.
Step 7
Dot the apples with small pieces of butter. Bake in the preheated oven for 25-40 minutes until golden. Time may vary depending on your oven.
Step 8
While baking, prepare the jam: warm in a saucepan with 1 tbsp water, stirring until fluid enough to brush. Adjust if the jam is already thin.
Step 9
Remove the pie from the oven and let it cool slightly. Brush the top with warm jam for shine. Serve and enjoy your puff pastry apple pie!
