Step 1
How to stew potatoes with sauerkraut in a cauldron? Prepare all ingredients. The sauerkraut can be store-bought or homemade. Choose potatoes to your taste. Meat or vegetable broth works great instead of water.
Step 2
Peel the onion. Rinse well and pat dry with a paper towel to remove excess moisture. Cut into small pieces. Place a frying pan with vegetable oil over medium heat and heat it well. Add the onion and fry, stirring, for 3-5 minutes.
Step 3
Squeeze the sauerkraut to remove brine. Add it to the fried onion. Stir and cook, stirring occasionally, until softened. The frying time depends on your taste. I like the cabbage to stay slightly crisp, so I cook it for about 10-15 minutes. If the sauerkraut is very sour, rinse it with cold water and squeeze out the excess liquid well.
Step 4
Peel the potatoes and rinse well under running water. Cut into large pieces and transfer to a cauldron. If you don’t have a cauldron, you can cook it in a pot or a deep sauté pan, preferably with a thick bottom so the vegetables don’t burn while stewing. Pour in boiling water.
Step 5
Spread the sauerkraut with onion on top and level it with a spoon. Do not stir.
Step 6
Season with ground pepper to taste. Add salt if needed. I didn’t add any because the sauerkraut was salty enough. If you like, add a little turmeric to make the finished dish brighter. Set over medium heat, cover with a lid, and simmer for about 10 minutes over low heat from the moment it comes to a boil.
Step 7
Stir. Check if there is enough liquid and, if needed, add more boiling water. Simmer until everything is cooked through. The stewing time depends on the potato variety and the size of the pieces. I simmered for another 20-25 minutes, until the potato pieces were tender.
