Preparation
Step 1
You can use ground meat from any kind of meat. I have a mix of pork and beef. The mushrooms can also be any kind. I use boiled forest mushrooms, but you can take regular button mushrooms and just rinse them well. Peel the potatoes and rinse them from any dirt.
Step 2
Put the peeled potatoes into a pot, cover with water and bring to a boil. Add a little salt. Cook the potatoes until done, about 15-20 minutes, until they are soft.
Step 3
Drain all the water from the cooked potatoes, mash them with a masher and leave to cool. While they are cooling, leave the lid slightly ajar so the excess steam can escape. If there is too much moisture, the zrazy will not shape properly.
Step 4
For the filling, pour a little vegetable oil into a hot skillet and fry the ground meat for 4-5 minutes.
Step 5
Peel the onion and carrot. Finely chop the onion and grate the carrot. Add the onion and carrot to the skillet with the meat. Fry everything together for 2-3 minutes.
Step 6
Chop the mushrooms very finely.
Step 7
Add the chopped mushrooms to the skillet with the meat. Fry everything together until cooked through; this will take about another 10 minutes.
Step 8
The finished filling will start to brown slightly. Add a little salt and spices to taste. Then remove the skillet from the heat and let the filling cool.
Step 9
Add the egg and flour to the cooled potatoes. Mix everything together.
Step 10
With wet hands, take a little potato mixture, form a flat patty and place some meat filling in the center. Then close it up like a small pie, sealing the edges. Shape into a zrazy patty and roll it in flour.
Step 11
Place the formed zrazy onto a hot skillet and fry over low heat with a small amount of vegetable oil.
Step 12
Fry the zrazy on both sides for 2-3 minutes until golden brown.
Step 13
A sour-cream garlic sauce will be the perfect addition. While the zrazy are frying, mix sour cream, dill and garlic.
Step 14
Put the ready zrazy on a paper towel to remove excess oil. Serve the zrazy hot, with the sauce. Enjoy!
