Potato Salad with Bell Pepper and Olives
A simple and tasty potato salad recipe. This veggie potato salad is very easy to make and turns out delicious. Great for holidays or everyday meals - take it to work or a picnic :)

Preparation
Step 1
Rinse the potatoes, place them in a pot, and cover with cold water.
Step 2
Put the washed carrots into a pot and cover with cold water.
Step 3
Put the potatoes and carrots on the heat, bring to a boil, and cook for about 25-30 minutes. Check doneness with a knife (if the knife goes into the potato easily, it’s done). Remove the potatoes and carrots from the water and let them cool.
Step 4
Pour frozen green peas into a small pot and cover with hot boiled water. Cook over medium heat for about 10 minutes. Drain and let the peas cool.
Step 5
Peel the cooled potatoes and carrots.
Step 6
Dice the potatoes into small cubes.
Step 7
Dice the carrots into small cubes.
Step 8
Finely chop the onion.
Step 9
Pour boiling water over the chopped onion.
Step 10
Transfer the onion to a paper towel and pat dry.
Step 11
Remove the core and seeds from the green bell pepper.
Step 12
Dice it into small cubes.
Step 13
Finely chop the green olives with a knife.
Step 14
Put all ingredients into a large bowl and mix well.
Step 15
Divide the salad among plates.
Step 16
Add salt and mayonnaise, mix well, and serve.
