Pork with Garlic in Foil (Baked in the Oven)
Perfect for the festive table - spicy, juicy, and incredibly delicious! Pork baked in foil in the oven turns out aromatic thanks to fresh herbs and looks beautiful with paprika in the marinade. This dish will decorate any meal, whether it’s a celebration or a simple family dinner.

Preparation
Step 1
Take boneless pork - I used loin, but neck or ham will also work. I used fresh herbs, but if you don’t have them, dry ones are fine too - just adjust the quantity to taste. Any spices you love will work; they’ll make the pork even more aromatic.
Step 2
Rinse the meat well, then pat it completely dry with paper towels. I used chilled loin, but if yours is frozen, defrost it first. Trim off excess fat if desired. Take 3 generous pinches of salt and rub the pork thoroughly on all sides. Peel garlic cloves and cut each into 4 pieces.
Step 3
Using a sharp knife, make small slits in the pork and insert the garlic pieces into each slit. This way, the meat absorbs the garlic flavor from the inside.
Step 4
In a small bowl, squeeze lemon juice (amount to taste). Add vegetable oil, paprika, and ground black pepper. You can also add other spices you like. Mix well - this is your marinade.
Step 5
Rub the marinade all over the pork, using your hands to massage it into the meat.
Step 6
Strip the leaves from rosemary and thyme sprigs. Finely chop the rosemary.
Step 7
Place a few sheets of foil overlapping each other. Put the marinated pork in the center, drizzle with the remaining marinade, and sprinkle with rosemary and thyme. If you use dried herbs, sprinkle them on top as well.
Step 8
Wrap the meat tightly in foil. For extra security, use multiple layers to prevent juice from leaking out. You can marinate the pork for a few hours in the refrigerator, but it can also be baked right away.
Step 9
Preheat the oven to 375°F (190°C). Place the wrapped pork in a heatproof dish and bake for 50 minutes.
Step 10
Then remove the dish from the oven but do not turn it off. Increase the heat to 465°F (240°C). Carefully unwrap the foil and remove the herbs so they don’t burn. Return the meat to the oven for 10 minutes to brown. Don’t overbake - high heat cooks quickly. Remove from the oven and let the pork rest slightly.
Step 11
Transfer the baked pork to a large serving plate and serve with a green salad or any side dish. Pour the juices left in the foil into a sauce boat and serve alongside the meat. Bon appétit!
