Step 1
Which cut of pork is best? The neck is ideal, but any cut will work. Rinse the meat under clean water and pat dry with paper towels.

Peel the carrots, onion, and garlic. Wash all vegetables. Slice bell peppers in half and remove seeds. Trim the stems from the eggplants.

Cut the eggplants into large pieces. If using a bitter variety, salt them lightly, mix, and leave for 15-20 minutes, then rinse and dry. Cut bell peppers into large cubes. Using multicolored peppers will make the dish look vibrant.

Dice the onion, slice the carrots thinly, and chop the garlic as you like.

Cut the pork into medium pieces. Do not make them too small - this keeps the meat juicy.

Heat oil in a heavy-bottomed frying pan. Add the pork and fry over high heat, stirring, until the pieces brown.

Add the onion, carrots, and garlic to the meat. Fry together for about 5 minutes, stirring periodically, until the onion becomes slightly translucent.

Add the eggplants and bell peppers.

Dissolve tomato paste in water until smooth. The amount of water may vary depending on how much sauce you want. Season with salt and pepper. Add any favorite herbs or spices. Mix well, bring to a boil, then reduce heat and simmer the pork under a lid until tender.

Occasionally open the lid and stir. It took about 50 minutes for the dish to finish cooking. Sprinkle with finely chopped herbs and remove from heat.
