Pork Meat in Pots with Mushrooms and Cheese (Baked in the Oven)

Preparation
Step 1
You can use any mushrooms. I’ll be using forest mushrooms. In mushroom season, I collect fresh ones from the woods. They should be cleaned, rinsed, and boiled in water for 20-25 minutes. Then drain them - you can use them right away or freeze them for later. Use boneless pork meat and any hard cheese.
Step 2
Peel the onion, rinse, and finely chop it. Heat a little vegetable oil in a pan and sauté the chopped onion for 1 minute until slightly translucent.
Step 3
Add the boiled mushrooms to the onions. If you use champignons or oyster mushrooms, there’s no need to boil them - just wash, slice, and fry directly. Fry the mushrooms with the onion for 4-5 minutes.

While the mushrooms are cooking, cut the pork into small pieces.

Remove the mushrooms from the heat, then add the pork, sour cream, salt, and spices.

Mix everything thoroughly.
Step 7
Grate the cheese and add it to the mixture, stirring well.

Divide the meat and mushroom mixture into ceramic pots, filling them almost to the top but leaving some space for bubbling while baking.

Cover the pots with lids and place them in a cold oven. Set the temperature to 180°C (356°F) and bake for 1 hour. (Starting in a cold oven prevents the ceramic pots from cracking due to sudden temperature change.)

The exact baking time depends on your oven. Once ready, remove the pots carefully and serve the dish directly in them - flavorful and piping hot.
