Preparation
Step 1
For the broth, choose a piece of pork on the bone rich in connective tissue - this ensures a rich and hearty broth. Onion and carrot add depth of flavor, while garlic gives a distinctive aroma.
Step 2
Rinse the meat thoroughly under running water, place it in a pot, and pour in cold water. Bring to a boil over medium heat. Do not cut the meat into pieces - keeping it whole helps it release juices gradually. As the water boils, foam will appear - skim it off.
Step 3
While the water heats, prepare the vegetables. Peel and rinse the onion, carrot, and garlic.
Step 4
Add the onion, carrot, garlic, and parsley to the pot of boiling water. Simmer the broth for 1.5 hours (90 minutes). Do not cover with a lid, as condensation can drip back and cloud the broth. Occasionally add hot water to prevent it from evaporating completely.
Step 5
About 15 minutes before the end, add black peppercorns, bay leaf, and salt to taste.
Step 6
Strain the finished broth through several layers of cheesecloth and use it as desired - for soups, sauces, or as a warming meal on its own. Enjoy!
