Preparation
Step 1
For this dish, you can use ham, tenderloin, or pork fillet.
Step 2
Wash the meat and pat it dry with paper towels. Trim off excess fat and sinew. Cut the pork into medium-sized pieces and place them in a large bowl.
Step 3
Peel and wash the garlic. Grate it on a fine grater or mince it using a garlic press.
Step 4
Season the meat with salt, add the minced garlic, khmeli-suneli seasoning, and paprika.
Step 5
Mix everything well. If time allows, let the meat rest for 30 minutes to absorb the seasonings.
Step 6
Peel and wash the onion, then slice it into thin half-rings.
Step 7
Grease a baking dish with vegetable oil. Place the pork pieces evenly in the dish.
Step 8
Spread the sliced onion evenly over the meat.
Step 9
Brush the top with a layer of mayonnaise.
Step 10
Bake in a preheated oven at 375°F (190°C) for about 45 minutes. Cooking time may vary depending on your oven - check occasionally.
Step 11
To check doneness, pierce a piece with a fork or wooden skewer - if the meat is tender, it’s ready. If the top browns too early while the meat is still undercooked, cover the dish with foil and continue baking until done. Serve hot with any side - mashed potatoes, rice, or vegetables.
