Preparation
Step 1
Prepare all the ingredients. You may use any pasta shape - elbows, bows, shells, orecchiette - as long as it’s made from durum wheat and good quality. In addition to the listed spices, use any you like. Choose creamy, spreadable processed cheese without additives.
Step 2
Grate the hard cheese on a medium or fine grater.
Step 3
Boil the pasta in plenty of salted water until al dente - about 1 minute less than indicated on the package. This way the pasta stays slightly firm in the center and will finish cooking in the oven. Drain well.
Step 4
Add sour cream, one third of the grated cheese, and pressed garlic to the pasta.
Step 5
Mix everything thoroughly.
Step 6
Combine the remaining grated cheese with the processed cheese and eggs. Mix well. If you prefer a thinner sauce, add one more egg. Processed cheese can be replaced with ricotta or another soft cheese of your choice.
Step 7
Grease a baking dish with oil. Spread the pasta evenly inside.
Step 8
Pour the cheese-egg mixture on top. Bake in a preheated oven at 180°C (about 355°F) for about 20 minutes, until a golden cheese crust forms. Enjoy!
