Pan-Fried Chicken Hearts with Onions

Step 1
How do you pan-fry chicken hearts deliciously? Prepare the ingredients. If your offal is frozen, thaw it first.
Step 2
Trim away any blood vessels and excess fat from the hearts, if present.
Step 3
Peel the onion and carrot and rinse them in clean water. I used both red onion and yellow onion so the finished dish looks more colorful.
Step 4
Cut the carrot into small pieces or into rounds - whatever you prefer. Slice the onion into half-rings or feathers.
Step 5
Heat vegetable oil in a thick-bottomed, high-sided skillet. Add the onion and carrot to sauté. If your carrot pieces are larger, sauté the carrot first for about a minute, stirring, then add the onion. Cook until golden and fragrant, stirring so the vegetables don’t burn.
Step 6
Remove the onion and carrot from the skillet with a spoon into a separate container. Add the hearts to the skillet and sear over high heat for a few seconds. Add a little more oil if needed.
Step 7
Pour in water, add salt, and season with your favorite dried spices to taste. After it comes to a boil, reduce the heat to low, cover, and simmer gently for about 20 minutes. Exact time depends on your stove and skillet.
Step 8
Then uncover, increase the heat, and evaporate all remaining liquid. During this time the hearts will finish cooking through. Add a bit of oil if needed and fry them to your preferred level of browning.
Step 9
Return the onion and carrot to the skillet and stir. Sprinkle with ground pepper.
