Step 1
How do you make flounder with vegetables in the oven? First, prepare the ingredients from the list. You can replace or add vegetables to your taste. Red onion can be replaced with regular onion or shallots. Instead of cherry tomatoes, you can use regular tomatoes. For a brighter dish, use red and yellow tomatoes.
Step 2
Rinse the flounder and pat dry. If the fish has a head, you can keep it, first removing the gills. You can remove the fins and tail if you like. With a sharp knife, make cuts on both sides of the fish.
Step 3
Peel the potatoes and cut into wedges or cubes, but not too small, so they keep their shape during baking.
Step 4
Remove the seeds and stem from the sweet pepper and cut into rings or sticks.
Step 5
Wash and pat dry the cherry tomatoes and cut in half. If using regular tomatoes, cut them into wedges.
Step 6
Peel the onion and cut into wedges. To keep your eyes from watering, rinse the onion and the knife with cold water. Peel the garlic and slice into thin slivers.

Prepare the ingredients for the marinade. You can add or replace ingredients to taste. I used olive oil, but any vegetable oil works.

In a small bowl, combine the oil, lemon juice and zest, fish seasoning, salt, and pepper, and whisk well with a fork until smooth.

Rub the flounder thoroughly with the marinade on both sides and let it marinate for 30 minutes. Preheat the oven to 180°C / 356°F.

Transfer the flounder to a baking dish, back side up. Pour the remaining marinade over the fish. Arrange the prepared vegetables around the flounder. Bake in the preheated 180°C / 356°F oven for 30-35 minutes or longer, until the fish and vegetables are done. Exact baking time depends on your oven.

Garnish the baked flounder with vegetables with fresh herbs and serve. Enjoy your meal!
