Preparation
Step 1
You can use any type of oats - quick or regular. I use regular rolled oats. Choose milk of any fat content or replace it with water in the same ratio (1 part oats to 3 parts liquid). Adjust sugar and salt to taste, remembering that the banana will add sweetness.
Step 2
Use a saucepan with a thick bottom to prevent burning. Add the oats, pour in the milk, and add sugar and salt. Place over medium heat.
Step 3
Peel a ripe banana. Cut it lengthwise into halves, then slice each half crosswise into thin pieces (about ¼ inch thick). You can mash it lightly with a fork for a smoother texture.
Step 4
When the milk starts boiling, stir to prevent the oats from sticking. Some prefer to bring the milk to a boil first and then add oats - that’s fine too. Reduce the heat and add the sliced banana.
Step 5
Cook over low heat for about 15-20 minutes, stirring occasionally. If you use quick oats, cook for less time (follow the package instructions). When done, turn off the heat and stir in a piece of butter.
Step 6
Cover the saucepan tightly and let the oatmeal sit for 10 minutes. During this time, the oats will absorb the remaining liquid and become creamy and thick.
Step 7
Serve the oatmeal warm for breakfast or a filling snack. Top with extra banana slices, fresh berries, nuts, or dried fruit. Drizzle with honey, maple syrup, or condensed milk if desired. Enjoy!
