Oatmeal Cookies with Raisins
Crumbly, tender, soft, and a hundred times better than store-bought! Oatmeal cookies with raisins are irresistibly delicious. Ideal with milk, kefir, or ryazhenka. Great for breakfast with coffee or a bedtime treat with tea.

Preparation
Step 1
Prepare all necessary ingredients. Oats vary by grind. The finer the oats, the softer and more uniform the cookies. I used extra-fine oats and ground them further by hand.
Step 2
Wash raisins, soak in hot water for 5-7 minutes, then drain and dry on a paper towel. Smaller raisins work best for uniform dough.
Step 3
Beat soft, room-temperature butter with sugar until fluffy. Brown or white sugar can be used.
Step 4
Add oats to the butter, sift in flour, and add an egg, baking powder, and cinnamon.
Step 5
Mix until a slightly sticky, crumbly dough forms. It should hold together in a ball. If too dry, add 1-2 tablespoons melted butter or water.
Step 6
Add raisins and knead thoroughly.
Step 7
Roll dough into 15-16 walnut-sized balls.
Step 8
Line a baking sheet with parchment, lightly dust with flour, place dough balls, and flatten slightly with fingers.
Step 9
Bake at 356°F (180°C) for 20-25 minutes until golden. Adjust baking time depending on oven and cookie size.
