Oat Flour Bread

Preparation
Step 1
Warm the water slightly - this helps the yeast activate faster. Sift both types of flour through a sieve to aerate them. This makes the bread lighter and fluffier. Don’t use only oat flour - the wheat flour gives the bread its structure and elasticity.
Step 2
In a large bowl, combine both flours and add the fresh yeast. Rub the yeast into the flour with your fingers until it becomes crumbly. Reserve a little flour to add later if the dough feels too sticky.
Step 3
Add salt to the flour mixture, then pour in the warm water. Start kneading. At first, it may seem too wet, but the dough will gradually thicken.

Continue kneading well until the dough becomes smooth and elastic.

Form the dough into a round ball and place it in the bowl. Cover with a towel and let it rise in a warm place for 1-1.5 hours. You can grease your hands with a little vegetable oil to make shaping easier.
Step 6
After an hour, the dough should have risen noticeably. Punch it down to release air and form a new smooth ball.
Step 7
Place the dough directly on a baking tray lightly greased with vegetable oil. Cover again with a towel and let it rise for another hour.
Step 8
The dough will rise even better this time. Make several slits on top with a sharp knife - this prevents the crust from tearing during baking. Brush the top with water for a crisp crust. Bake in a preheated oven at 425°F (220°C) for 10 minutes, then lower the temperature to 390°F (200°C) and bake for another 30 minutes. Adjust based on your oven.
Step 9
The finished bread will be golden and crusty on all sides. Remove from the oven and wrap it in a towel to cool. Serve slightly warm or fully cooled. Enjoy your homemade bread!
