No-Bake Cookie Cake with Custard and Nuts
A very simple and quick dessert to enjoy with tea! This no-bake cookie cake with custard and nuts is super convenient when you don’t have access to an oven. It’s especially good in summer, during fresh berry season - and in the heat you won’t feel like baking anyway.

Step 1
How do you make a no-bake cookie cake with custard? Prepare the ingredients. Use simple square cookies (like classic tea biscuits). I used cookies with a chocolate coating. Choose good-quality, real butter with no substitutes - its flavor strongly affects the cake.
Step 2
First, make the custard. Crack one chicken egg into a saucepan.
Step 3
Add the flour to the saucepan.
Step 4
Add vanilla sugar.
Step 5
Then add regular sugar.
Step 6
Pour the milk into the saucepan in portions, mixing well after each addition. You should get a smooth mixture with no lumps.
Step 7
Set the saucepan over medium heat and cook, stirring constantly, until thickened, then remove from the heat.
Step 8
Add the butter to the saucepan and stir until the custard is smooth.
Step 9
Cover the saucepan with plastic wrap so it touches the surface of the custard, and cool until warm. This prevents a skin from forming.

Transfer two-thirds of the warm custard from the saucepan to a deep bowl and beat with a mixer.

Add chopped walnuts and mix everything together.

Start assembling the cake. Take a suitable pan and line it with plastic wrap. Take cookies one by one and spread a layer of cream on them.

Arrange the cookies in the pan, starting from the sides, in a circle.

Continue until the pan is filled with cookies. You can choose a different layout - for example, layer cookies horizontally in a square pan.

Crumble the remaining cookies into the bowl with the nut custard and mix.

Pack the center of the pan tightly with this mixture.

Fill any gaps in the pan with the remaining custard left in the saucepan (the one-third without nuts).

Cover the pan with plastic wrap and refrigerate for a few hours so it soaks and sets.

Before serving, remove the cake from the pan.

Decorate the top with melted chocolate.

Add strawberries on top.
