Nkatie Cake (Peanut Brittle)

Preparation
Step 1
If your peanuts are not roasted yet, dry-roast them in a pan over medium heat for 5-8 minutes until golden and fragrant. Remove the skins by rubbing them in a clean cloth or between your palms. Set aside.
Step 2
In a large non-stick saucepan, add sugar and 1 tablespoon of water. Cook over medium-low heat, stirring occasionally, until the sugar melts and turns into a golden-brown caramel.
Step 3
Quickly add the roasted peanuts to the caramel. Stir continuously so all peanuts are evenly coated with the hot syrup.
Step 4
Once well-mixed, pour the hot peanut mixture onto a greased tray or parchment paper. Use a rolling pin or the back of a spoon to flatten it to about 1 cm thick. While still warm, cut into squares or rectangles using a sharp knife.
Step 5
Allow it to cool completely - it will harden as it cools. Eenjoy!
