Easy
About 30 min.
Preparation
Step 1
I use milk with 2% fat. Choose good-quality millet - bright yellow and aromatic.
Step 2
First, prepare the millet. In a separate bowl, pour hot water over it and let it stand for 1-2 minutes. This helps remove the thin film that causes bitterness in cooked porridge.
Step 3
Drain the hot water, then rinse the millet 2-3 more times in cold water.
Step 4
Pour milk into a pot, add sugar and a pinch of salt. Place on the stove and bring to a boil.
Step 5
Add the rinsed millet to the hot milk and, stirring, bring it back to a boil.
Step 6
Cook the millet in the milk over low heat for 10-12 minutes, stirring occasionally. During this time, the grains will expand. Then cover the pot with a lid, remove from heat, and let the porridge rest for 15 minutes. There’s no need to wrap the pot - it will finish perfectly right on the stove.
Step 7
While resting, the millet will absorb most of the milk and reach the perfect creamy consistency.
Step 8
The porridge will be thick, not dry, and without excess liquid. Spoon it into bowls and add a little butter on top.
Step 9
It’s especially delicious if you add some slightly sour berries - they perfectly balance the sweetness. Enjoy!
