Meat-Filled Pancakes (Lazy Chebureki)

Step 1
How do you make meat pancakes (lazy chebureki)? Prepare all the ingredients. Start with the batter. The milk and eggs should be at room temperature so the batter turns out well, so take them out of the fridge 1-2 hours ahead.
Step 2
Wash the eggs. In a deep bowl, whisk the eggs with sugar and salt. No need to whip to foam.
Step 3
Add the milk and mix until smooth.
Step 4
Sift the flour so it aerates and the pancakes turn out light. Make a well in the flour and pour in the egg-and-milk mixture. Whisk until smooth. Add the remaining flour in small portions until the batter is as thick as heavy cream.
Step 5
Add vegetable oil and mix. Then pour in boiling water and immediately stir quickly. Let the batter rest for 15-20 minutes.
Step 6
While the batter rests, make the filling. Use any herbs you like - parsley, cilantro, thyme, dill. I used dill.
Step 7
Peel the onion, rinse it, and finely chop it. Put the ground meat, herbs, and onion into a deep bowl so it’s easy to mix.
Step 8
Add salt and pepper to taste and knead the filling thoroughly until uniform. If it’s hard to mix, add a little water and mix again.
Step 9
Use a 22 cm (about 8½-inch) skillet - either a crepe pan or any pan you like for pancakes. Heat it until hot and grease with vegetable oil. Set to medium heat. Pour in a little batter and, turning and tilting the pan, spread it over the bottom. Immediately, while the batter is still liquid, place about 1 tablespoon of filling on one half.
Step 10
Using a spatula, lift the free half of the pancake and cover the filling. Gently press the edges so they stick together, taking care not to tear the pancake.
Step 11
Cook the pancake on both sides until golden brown. Grease the pan with oil as needed if the pancakes start sticking.
